Nutritional Composition
This study was initiated to provide data
on the refrigerated shelf stability of White Oak RM vegetables
in a deli application or refrigerated storage. The vegetables
are very stable through a four (4) week period. Use of
the vegetables with other ingredients will require the
customer to monitor and control the total microbiological
load of additional ingredients. Please contact Dr. Rick
Falkenberg or Lisa Trexler if you have questions or need
additional technical information. White Oak does certify
all RM vegetables to be pathogen free. Please see the
