Zucchini, Green and Yellow
Reduced Moisture Zucchini is produced from freshly harvested, firm, Zucchini in the well developed stage. Following harvest the Zucchini is washed, inspected/trimmed, sliced or diced, blanched, partially dried to remove excess moisture, and then quick-frozen to preserve natural flavor and color.

Vine Ripended Tomato
Reduced Moisture Extra Select Vine Ripened Tomatoes are produced from red, ripe California tomatoes specially selected for color and texture.  Tomatoes are processed within hours of picking using White Oak Frozen Foods’ proprietary technology, partially dried to remove excess water, then quick-frozen to lock in firm texture, superior color and flavor

Sweet Onions
Reduced Moisture Sweet Onions are prepared from a variety of onion that is specifically grown for a mild flavor characteristic.  The onions are peeled, rooted and topped, washed, and cut to various dice sizes and strip.  The onions are gently dehydrated to remove excess moisture then individually quick-frozen (IQF) to preserve their flavor and texture.

Yellow Bell Peppers
Reduced Moisture Yellow Bell Peppers are produced from fresh, firm, well-shaped bell peppers, grown from carefully controlled hybrid seed stock. The peppers are fully cored and sized, then gently air dried to remove approximately one-half the weight and volume, then quick-frozen to preserve natural flavor, texture, and color.

Red Bell Peppers
Reduced Moisture Red Bell Peppers are produced from fresh, firm, well-shaped bell peppers, grown from carefully controlled hybrid seed stock. The peppers are fully cored and sized, then gently air dried to remove approximately one-half the weight and volume, then quick-frozen to preserve natural flavor, texture, and color.

Green Bell Peppers
Reduced Moisture Green Bell Peppers are produced from fresh, firm, well-shaped bell peppers, grown from carefully controlled hybrid seed stock. The peppers are fully cored and sized, then gently dehydrated to remove approximately half the weight and volume, then quick-frozen to preserve natural flavor and color.

Mild Anaheim Green Chili Peppers
Reduced Moisture Green Chili Peppers are produced from fresh, firm, well-shaped chili peppers which are consistently low in heat and without wide heat variations.  Green Chili Peppers are fully cored and sized, gently air dried to remove approximately half the moisture, and quick-frozen to preserve natural flavor and color. Product is available in both sweet and mild pungency.

Sweet Green Jalapeno Peppers
Reduced Moisture Diced Sweet Green Jalapeños are made from a proprietary variety of no heat jalapeño peppers. The fresh jalapeño is stemmed, washed and diced. The fresh jalapeño is partially dehydrated to remove some of the moisture and then frozen. Product is available as sweet pungency.

Celery
Reduced Moisture Green Celery Stalk is prepared from an exclusive variety of deep-green California celery. The celery is processed within hours of harvesting. It is then washed, trimmed, inspected, and diced; then gently air dried to remove only the free water and quick-frozen to preserve color and flavor.

Broccoli Florets
Reduced Moisture Broccoli Florets are produced from fresh, firm heads of Broccoli in the well developed stage. Following harvest the broccoli heads are cut into florets, sized, washed, blanched, partially dried to remove excess moisture, and then quick-frozen to preserve natural flavor and color.

Mushrooms
Reduced Moisture Mushrooms are produced from fresh, cultivated Mushrooms with caps. Following harvest, the Mushrooms are washed, inspected, sliced or diced and gently air dried to remove excess moisture, and quick-frozen to preserve natural flavor and color. Product is available in both sliced and diced sizes
