FORMED
TO MARKET REDUCED MOISTURE™ IQF VEGETABLES
June 15, 2002: White Oak Frozen Foods LLC, has
concluded an exclusive co-pack agreement whereby Cebro Frozen
Foods, Newman, CA will produce Reduced Moisture™ (RM) IQF Vegetables
under the White Oak brand.
White Oak President, Harold "Arch" Archibald says
the initial focus for the new company will be to satisfy the rapidly
growing demand for these new REDUCED MOISTURE™ IQF Vegetables
- especially Tomatoes, Chili Peppers, Onions, Broccoli and Zucchini.
RM Vegetables are produced using the combined
technology of dehydration and freezing to eliminate 30% to 50
% of the initial moisture of the fresh vegetable. The resulting
control of moisture of the vegetable piece reduces clumping, eliminates
syneresis, and intensifies color and flavor.
Installation of the specialized equipment required
to produce RM products within the Cebro facility is underway,
with start scheduled for August, 2002.
The critical functional advantage of the RM process
in controlling syneresis as the frozen vegetable is thawed or
heated at the point of consumption opens up many new uses of RM
IQF Vegetables that were not available to product and menu development
specialists in the past.
With the use of RM IQF Vegetables, soggy vegetables
and wet spots in a finished food product are eliminated. Other
benefits of this new process are reduced shipping and handling
by 25 - 50%, improved freeze/thaw stability, very free flowing,
and excellent micro control thru an all natural SHS system.
This new venture will bring together a unique
team of experienced individuals in vegetable crop management,
processing and ingredient marketing.
In addition to Archibald, the White Oak management
team will consist of Skip Cerutti, Richard Brown and Dan Wilkinson.
Cerutti and Brown have operated Cebro Frozen Foods
since it's inception in 1993. The Cerutti family has been involved
in local agriculture since 1912. In addition to Cebro Frozen Foods,
they also farm several thousand acres on the West side of the
San Joaquin Valley. Richard "Rich" Brown came to Cebro in 1993,
having spent 13 years with the Del Monte Company.
Archibald and Wilkinson have an accumulated 75
years of experience in sales and marketing of frozen and dehydrated
vegetables with Basic American, Inc., McCormick and Co., and General
Foods Corp.
